Cilantro & Mushroom Chili Cheese Toast


All my readers by now know that I love Mushroom and when I sauté it with herbs or leaves,I love them even more. Cilantro also known as Coriander has been my favorite of the green leafy vegetables and it has immense health benefits. I not only use it to garnish my food but enjoy cooking with it as well. I am always generous with the amount of cilantro I use and enjoy the freshness in taste that it has. We’ve all eaten a regular chili cheese toast I’m sure but I decided to make something different and added mushrooms to it. Sauté a little,bake for couple of minutes and you’ll have the most amazing coriander flavored chili mushroom cheese toast. The mushrooms make a great topping and when it’s layered on buttered garlic bread and baked with cheese,what else could you ask for. A perfect recipe and a great snack – Simply Savvillicious! Let’s begin!





Garlic bread – 4 slices

Butter – 2 tsp

Oil – 1 tbsp

Ginger garlic paste – 1 tsp

Green chilies – 2 medium finely chopped

Mushrooms – 200 gm chopped in halves

Salt to taste

Pepper – 1 tsp

Cilantro – 2 tbsp finely chopped

Grated cheese – ½ a cup (Mozzarella or Regular Amul)




1) Apply butter on the garlic bread slices and keep aside.

2) In a pan heat oil and add the green chilies. Stir fry for couple of min and add the mushrooms. Add salt, pepper and coriander leaves and sauté for about 5 min.

3) Lay the slices of bread first and add the sautéed mushrooms. Spread the mixture well until the corners of the slice and add grated cheese

4) Pre- heat the oven for about 5 min on 150 degrees C. Bake the bread for about 7-10 min or until the cheese melts. Sprinkle pepper before serving with Tomato Ketchup

Serves – 2 people

Inspiration – Good flavors from herbs and leaves in cooking have always inspired me and helped me discover or rather understand my taste buds better. It is like a self analysis to your palate and helps you identify your preference. Just love Cilantro and all the other Italian herbs in my cooking.
