Tandoori Prawns on Toast served with a Mint Yogurt dip

 

Prawns are my favorite among sea food. I love it cooked in any style. They are used in almost every cuisine and it surprises me as to how could they taste so darn good every time and in every style. Vow! So,what I’ve made here today are Prawns in hardcore Indian Tandoori masala,served on a toast with an onion salad and a mint yogurt dip. Usually Tandoori “Chicken” is extremely famous,but I love this marinade with any meat (fish,chicken or even mutton). It is so tasty and besides you can never go wrong with an Indian marinade. Originally you need coal burning against the meat to get the actual charred taste of a Tandoor,but I make mine in a pan and it tastes equally good. You can also use a grill to roast the meat and veggies and serve. It is a great dish and something different from eating it with a Naan or a Pita. Super Simply Savvillicious – Let’s begin!

 

 

Ingredients for the Marinade

 

Prawns peeled and clean – 200 gm (small or medium sized)

Yogurt – 2 tbsp (preferably hung curd)

Ginger Garlic paste – 1 tbsp

Turmeric – ¼ tsp

Coriander powder – 1 tsp

Garam masala powder – 1 tsp

Red Chili powder – 1 tsp

Meat masala – 2 tsp

Salt to taste

Orange food color – ¼ tsp or less

Vegetable oil – 1 tbsp

Chaat Masala to sprinkle – 1 tsp

Coriander leaves to garnish

 

Ingredients for the dip

 

Pudina chutney – 2 tbsp

Yogurt – 2 tbsp

Cumin powder – ½ tsp

Chaat Masala – ½ tsp

Pinch of salt

 

Ingredients for the Salad

 

Onions – 1 sliced thin and long

Salt to taste

Pepper – ½ tsp

Lemon juice – ½ tsp

 

Ingredients for the Toast

 

Brown or white bread – 2 pieces – cut into rounds

Butter – a tsp each on a slice

 

Method

 

1) Marinate the prawns with the ingredients mentioned and set aside for at least 2 hours. A quick fix would be to give it 20 min, but since it’s a Tandoori dish we need the masala to seep into the prawns well. So if you have time please marinate  even longer than 2 hrs as it would only taste better

2) In a non-stick pan add oil and shallow fry the prawns until it’s well roasted. This should take you about 8-10 min. Remove from heat and set aside

3) Mix all the ingredients well for the mint yogurt dip and set aside

4) In a bowl add the sliced onions, salt, pepper and lemon juice and mix well. Set aside

5) Take bread roundels and toast on both sides. Apply butter and set aside
6) Take a wide serving plate. Place the slices of toast on it. Add some of the onions and spread well. Add 1 tsp of the mint yogurt dip on the onions. Arrange about 4-5 pieces of the Tandoori prawns on the dip. Sprinkle some chaat masala and some coriander leaves to garnish.

 

A beautifully set plate, so appetizing and full of flavor. Need I Say more? Just try it and you will love it. Assembling this dish is so much fun and finally when it all comes together it’s worth the time.

 

Prep Time – 2o min or 2 hrs – Marinating time

Cooking time – 2o min

Serves – 2 people

Inspiration – My love for prawns. I love the flavors from a Tandoori marinade and before used it only for chicken. I had prawns this time and decided to try the same recipe with it. It is a great recipe and you should try this at home.
